Blueberry Banana Muffin Cookies

Chris here. Last week my isolation boredom led me down the path of baking! Who else has tried this? At the start of the week, I tried Damper. At the end of the week, I attempted a muffin recipe.

Now, drawing inspiration from my niece and Seinfeld, I decided to avoid the muffin tin and just plop the batter straight on the oven trays (obviously with some baking paper. I'm not a lunatic).

The end result, delicious muffin top/cookies! MOOKIES, if you like. We have been eating them for a snack and/or for dessert. Our young son has been eating them for meals - finally a food he likes.

Adjustments were made to my specifications. Feel free to add a little bit of sugar to make them a bit sweeter (maple syrup or whatever you fancy), however, banana and blueberries add plenty of sweetness. Add butter or oil if you would like your mookies to be a little more moist. Side note: can we make #mookies trend?!

Nutritional tip: remember that maple syrup and sugar are processed the same way in your body so it doesn't matter which one you use.

We've saved the best part for last:

These mookies are low calorie, nutrient dense snacks. Not that we advise calorie counting whilst in isolation. We just want you to rest assured that by participating in your online Pilates classes and online workouts with Premium Pilates and Fitness or whoever, you deserve delicious baked goods!

Ingredients

2 cups self raising flour

1 egg

1 banana

200g frozen blueberries 

60g frozen raspberries

1 cup soy milk (or whatever milk you want)

baking paper

Baking

1. Preheat oven at 190 degrees. Line two baking trays with baking paper.

2. Pour flour, banana, blueberries and raspberries into a bowl and stir to combine. Add the egg and milk, stirring until all the ingredients have combined nicely.

3. Spoon approximately 14 heaped tablespoon onto the baking papered oven trays, making sure to leave space between the batter as the muffin cookies expand. Bake for 25 minutes or until a skewer/knife is inserted in the middle of the biggest mookie and comes out clean.

Makes: 14 mookies = 14 serves.
