Homemade Frozen Yoghurt

I have made this frozen yoghurt so many times this year. It's a great way to use up almost expired yoghurt and it's a healthy treat. I use lactose free yoghurt due to a dairy allergy, which works well, as theres not much dairy-free frozen yoghurt out there to buy. You can use any type of fruit you like, as long as you process it until it is smooth.

Ingredients

  • 2 heaped cups frozen strawberries / blueberries / whatever fruit you wish
  • 1 cup water
  • 2 cups yoghurt
  • 2 tablespoons vanilla essence
  • 2 tablespoons maple syrup
  • ½ cup water

Method

1.Combine the frozen fruit and ½ cup water in a food processor. Process until smooth.

2. Add the yoghurt, vanilla and maple syrup to the smooth berries and process until all combined.

3. Pour the mixture into ice cube trays or small containers and freeze for 3 hours or until frozen.

4. Remove the frozen blocks, placing into the food processor again. Add ½ cup water and process until smooth. Note: this can take a little while.

5. Spoon the frozen yoghurt into little bowls or ice cream moulds and place in the freezer again for 2-3 hours or until frozen.
