Has anyone else been craving sugar during winter? These chilly nights have got me wanting chocolate, cake, cookies, you name it! So instead of jumping in my car to buy 1 kilo of dairy milk chocolate, I've been baking instead.
My new fav recipe is this Cinnamon Almond Cookie by Donna Hay. You only need five ingredients, a few minutes to prep and into the oven they go. The delicious aroma of homemade baked goods will permeate through your home, the oven will warm up your kitchen and your sweet craving will be satisfied!
These cookies taste like caramelised drops of heaven and are perfect served alongside a warm cup of tea on a cold night.

The Recipe
Ingredients
1 1/2 cups almond meal
1/2 cup almond butter
1/4 cup natural maple syrup
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
Baking
1. Preheat the oven to 180 Celsius. Line a large baking tray with baking paper.
2. Combine all ingredients in a large bowl and stir well to combine. I like to roll the cookie dough into one big ball, using wet hands if the mixture is slightly dry.
3. Roll 1 tablespoon portions of the dough into balls, flatten by pressing the dough gently between two hands, then place on the tray. Continue until all the dough is used (this will make between 12-15 cookies).
4. Bake in the oven for 15-20 minutes or until the cookies are deep in colour - this means until they are golden and crisp! 5. Enjoy! Serve with a hot cup of tea, hot chocolate or on their own. Good luck stopping at just one!
