Healthy Blueberry Muffins

These muffins are super easy to make, healthy and dairy-free! You can use a different type of milk or even yoghurt in place of soy milk if you don't have any allergies. I have made these muffins several times whilst in isolation: I feel like all I am doing is cooking or doing online workouts! Anyone else feel me?

Ingredients


*2 cups wholemeal plain flour
*1 tsp baking powder
*pinch of salt
*1 tsp ground cinnamon
*1/4 cup olive oil, plus extra to grease
*2 tbps honey or maple syrup
*2 eggs
*1 tsp vanilla essence
*1 cup milk (I used soy milk but you can use any alternative)
*1 cup frozen blueberries and 1 tsp flour

Baking

1. Pre heat a fan forced oven to 180 degrees Celsius. Lightly grease a 12 hole muffin tray with oil.Â

2. Combine the flour, baking powder, salt and cinnamon in a large bowl and mix to combine.

3. Combine the honey / syrup, oil, eggs vanilla and milk in another bowl and whisk to combine.

4. Stir the wet ingredients into the dry ingredients until just combined (it will be a thick mixture, which is fine).

5. Stir the blueberries with the 1 tsp flour and then lightly stir into the mixture.

6. Spoon the mixture into the 12 hole muffin tin.

7. Bake in the oven for 30-35 minutes or until lightly golden.
