These healthy, simple and Mexican inspired turkey lettuce wraps are perfect for the warmer weather that we are feeling already! I love eating this way during spring and summer; light, fresh and colourful! You can substitute the turkey mince for any other type of mince or for firm tofu. Ingredients
Turkey Filling
- 100g turkey breast mince or 100g firm tofu
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon smoked paprika
- 1 garlic clove minced
- 1 tsp coconut aminos or soy sauce
Vegetable Filling
- 1/2 red onion (diced)
- 1/6 red capsicum (diced)
- 1/6 green capsicum (diced)
- 6 cherry tomatoes (diced)
- 1/4 large cucumber (diced)
- 125g tinned corn kernels (washed and drained)1/4 avocado (diced)
- 6 cos lettuce leaves
Topping
- 2 tbsp salsa
- 2 tbsp tzatziki
- 1 tbsp lime juice
- Handful fresh basil or coriander
Method
1. Start by washing, slicing and dicing all your veggies as stated and set aside.
2. Prep your turkey mince. Place a non stick pan over medium heat and add turkey mince, cumin, coriander, paprika, coconut aminos / soy sauce and minced garlic. Sauté well together for around 5-8 min, or until turkey mince is lightly golden brown and tender. *Follow the same instructions for tofu, just make sure to really break the tofu apart with a big spatula or spoon so it has a mince like quality.
3. Form your lettuce wraps. Add 6 cos lettuce leaves to your serving plate and spoon a tablespoon of the turkey mixture into the center of each lettuce leaf, taco style. Equally divide the diced red onion, capsicum, tomatoes, cucumber, avocado and corn kernels to each lettuce cup.
4. Add 1/3 tbsp of salsa and tzatziki to each lettuce wrap and drizzle over lime juice. Sprinkle some fresh basil or coriander and crack salt + pepper (to taste). Serve + enjoy!
