Life is soooo busy for everyone, particularly in January! We all want to make our lives as chilled as possible, so here's a very simple but delicious recipe for you: super easy pancakes from the kitchen wizz Lala!
Recipe below serves 1-2, so we recommend doubling the quantities at least!
TIP: picking your toppings will help make these pancakes amazing! Add all the fresh summer fruit you have on hand; strawberries, kiwi fruit, mango, raspberries, whatever! We love a dollop of yoghurt, a drizzle of honey or maple syrup, a spoonful of jam or nut butter; you get creative!
Ingredients
- 1/2 cup plain flour
- 1 tsp baking powder
- pinch of salt
- 1/2 tsp vanilla extract
- 1 tsp apple cider vinegar
- 1/2 cup almond milk or milk of choice
Cooking
1. Whisk ingredients together to form a batter.
2. Heat a frypan over medium high heat and add pancake batter. Cook for 2-4 minutes per side or until bubbles appear and both sides are lightly golden brown.
3. Serve with toppings + enjoy!
