Makes 12 Donuts
These doughnuts come together so easily and are incredibly delicious! Using a food processor or Thermomix makes it quick and easy for kids to get involved, giving you the perfect afternoon treat in less than an hour (which is probably as long as kids can go before complaining of wanting one!).

Ingredients
Strawberry Crumble:
4 tbsp plain flour
2 tbsp sugar (raw works best)
30g cold butter, cut into cubes
15g bag of Strawberry Crisps or freeze-dried strawberries, crumbled into small pieces (Frisp brand found in dried fruit and nut section of Coles and Woolworths)
For the Doughnuts:
¼ cup (60g) softened butter or coconut oil
¼ cup honey or maple syrup
½ cup sugar of choice (white sugar will give a more subtle taste, dark sugars will make the doughnuts more caramel in flavour)
¾ cup frozen strawberry slices
½ cup sour cream or Greek yoghurt
1 tbsp vanilla bean paste or 1 tsp vanilla essence
1 lemon, zest and juice
3 eggs
1 ½ cups GF flour + ½ cup tapioca flour (for GF) OR 2 cups plain flour
1 tsp baking powder
½ tsp salt
For the Glaze:
½ cup icing sugar
1 tbsp milk of choice
To Make the Strawberry Crumble:
- Preheat the oven to 160℃. Line a small baking pan with baking paper and set aside.
- In a small bowl, combine flour and sugar. Cut in butter until mixture is crumbly by using your finger tips, rubbing the butter to crumble it into the dry mixture; you should be left with different sized chunks of mixture. Sprinkle onto the prepared cookie pan and bake for 8-10 minutes. Let cool completely, then transfer back to the small bowl and combine with the strawberry crisps or freeze dried strawberries. Set aside while you make the donut mixture.
To Make the Donuts:
- In a food processor or thermomix, blend together the butter or oil, honey or maple syrup and sugar until smooth and well combined. Add in ½ cup of the frozen strawberries, yoghurt or sour cream, vanilla bean paste, lemon zest and juice and blend until smooth. With the motor running on low, crack in one egg at a time until fully incorporated before adding in the next. Add in all of the dry ingredients at once and blend on low speed until just combined and smooth. Lastly add the reserved strawberry pieces and stir (not blend!) a few more times until they are broken down but not fully incorporated.
- Grease a donut pan with cooking spray or oil of choice and fill with mixture ¾ of the way. Bake for 12 minutes or until golden in colour. Allow to cool down slightly before turning out onto a wire rack to cool completely.
To Make the Glaze and Assemble Donuts:
- In a small bowl, combine powdered sugar and milk and whisk until combined.
- Dip donuts in glaze, allowing excess to drip away, then dip into crumble mixture.
