Lemon and Poppyseed Muffins

These delicious, mouth watering and allergy friendly muffins were created by our lovely client Lara, who is a recipe creator, food stylist, photographer and writer for lalasplate.com. You will regularly find Lara working out at one of our Premium Pilates & Fitness studios or in the kitchen being creative!

This might just be my new favourite muffin recipe! They’re dairy-free, nut-free, sugar-free, vegan and only 110 calories per muffin! These are so delicious and everyone in my family loved them! I love serving these warm, halved and spread with some homemade raspberry jam. Enjoy x

We thought these light, fresh and guilt free Lemon and Poppyseed muffins would be a delicious recipe to make at the beginning of the new year. Maybe you are itching to get your kids to do an activity with you or maybe you are craving something sweet but healthy. We hope you enjoy making them almost as much as you love eating them!

The details:

Serves 12 | Prep – 10 minutes | Cooking – 20-30 minutes

Ingredients:

- 1/3 cup lemon juice

- 1 1/2 tbsp lemon zest

- 1 cup soy milk (or whichever milk you wish)

- 1/2 tbsp baking powder

- 1 tbsp Apple cider

- 1 tsp vanilla

- 1/4 tsp salt

- 2 cups plain flour or buckwheat flour (if GF)

- 1/2 cup granulated natural stevia

- 1 tbsp olive oil

- 2 tbsp poppy seeds

Baking:

1. Preheat oven to 180 Celsius and line a 12-hole muffin tray with patty cases or baking paper.

2. Add lemon juice, zest, soy milk, baking powder, apple cider vinegar, vanilla extract and salt to a large mixing bowl and stir. The mixture should froth.

3. Stir in flour, stevia, olive oil and whisk well until a smooth batter is just formed, be careful to not over-mix. Gently fold in poppyseeds.

4. Equally divide the batter among the 12 patty cases and place into oven.

5. Bake for 25-30 min or until muffins are lightly golden brown and when a skewer is inserted it comes out clean. Allow to cool, remove from muffin tray and enjoy!

Store in an airtight container at room temperature for 3-5 days.
