They make the sweetest start to the morning, a perfect afternoon treat, or you can easily pack one in your gym bag for a post workout flavour surge.

Healthy Choc Chip Banana Muffins

Total Time: 45 Minutes
Ingredients
- 2 + 1/2 medium ripe bananas
- 1/2 cup unsweetened almond milk
- 1 eggÂ
- 1 + 1/2 cup plain wholemeal flour or buckwheat flour
- 3 teaspoons baking powder
- Pinch of salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 3 tbsp coconut oil
- 1 tbsp maple syrup
- 1/4 cup coconut sugar
- 1/2 cup vegan chocolate chips
Method
- Preheat oven to 180 degrees Celsius and line a 12-hole muffin tray with baking paper or patty cases.
- In a large mixing bowl mash banana until smooth. Whisk in almond
milk and beat your egg together with the banana until combined. - Add in all the other ingredients (apart from choc chips) and stir well until a smooth batter is formed.
- Gently fold in chocolate chips into the batter. Transfer two tablespoon sized portions of the batter to your prepared muffin tray.
- Place and bake in oven for 25-30 minutes, or until lightly golden and when a skewer is inserted it comes out clean. Allow to cool & enjoy!
