Finally a Christmas recipe for you all! This healthier version of classic gingerbread cookies is delicious and can be made as lovely festive gifts! They are so fun to make (especially as a way to keep kids entertained for a while!), bake + decorate! delicious, vegan and can easily be made gf too!
Makes: 35 Cookies
Ingredients:
1 tbsp flaxseed meal
3 tbsp water
3 cups wholemeal flour (or gf alternative)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 tsp ground ginger
3/4 tsp nutmeg
2 1/2 tsp cinnamon
1/2 tsp all spice
1/4 tsp cloves
1/3 cup + 1 tbsp melted coconut oil
1/3 cup pure molasses
1/4 cup brown/coconut sugar
1/4 cup maple syrup
1 teaspoon vanilla extract
Icing
1/2 cup powered icing sugar
2 tsp almond milk
1 tsp vanilla extract
Method:
1. Line 2 baking trays with baking paper & preheat oven to 180°C.
2. First prepare your flax egg. Add flax meal & water and stir well together until combined. Set aside for 10 minutes or until thickened.
3. Sift flour, baking soda + baking powder into a large mixing bowl. Add salt, ginger ground, nutmeg, cinnamon, all spice, cloves & mix well together.
4. In a separate mixing bowl, add coconut oil, molasses, sugar, maple syrup, vanilla extract and flax egg. Whisk well together.
5. Pour the liquid mixture into the dry flour mixture. Mix together until just combined and a cookie dough is formed.
6. Lightly flour or place a sheet of baking paper onto the working surface. Add the cookie dough & roll out using a rolling pin, until it’s 5cm thick. Use Christmas cookie cutters to cut out shapes & place each cookie onto baking trays, leaving around 5cm space between each.
7. Combine the dough scraps into a ball & roll out with rolling pin. Continue this process & cut cookie shapes until no dough remains.
8. Place into oven and bake for 8-15min. Note: 8 min for a softer cookie, 15 min - for a crisper cookie (*time varies depending on oven). Allow to cool.
8. Icing: sift icing sugar into a bowl & whisk together with almo milk & vanilla extract. Add to a piping bag and pipe icing onto the cookies. allow to set.
The gingerbread will keep well at room temp for up to a week (but they will disappear much faster than this!).
