Lemon, Lime & Coconut Bliss Balls
You can make these bliss balls even more simple by omitting the lime and doubling the lemon quantity. This may be the single most used recipe in my kitchen! I love how light these bliss balls are.
Ingredients
- 1 cup firmly packed almond meal
- 1 ½ cups firmly packed unsweetened desiccated coconut, plus ½ cup extra, to roll
- ¼ cup water
- 3 tablespoons natural maple syrup / rice malt syrup / honey
- the zest & juice of 1 medium lemon
- the zest & juice of 1 medium lime
- 1 teaspoon pure vanilla essence
Method
- Place all the ingredients in a large bowl and stir well to combine, adding an extra splash of water (in addition to the water listed in the ingredients list) if the mixture is too dry.
- Have a small bowl of water and a flat plate with the extra coconut ready. Wet your hands, then take 2 tablespoons of the mixture and roll into an even ball. Next roll the bliss ball into the coconut. Repeat until all the mixture is used up.
- Place in the fridge for at least 30 minutes to set (if you can resist trying one!). Store in the fridge for several days.

Your biggest concern with making these will be stopping at one! Fresh Medjool dates do taste amazing here, but if you are on a budget the dried dates work too. Just keep in mind that ‘pitted’ dates still need to be checked for pits, so make sure to chop the dates! Ingredients
- 2 cups dried dates / fresh Medjool dates, roughly chopped, pits removed
- 1 cup almond meal
- 1 tablespoon ground cinnamon
- pinch of sea salt
- 2 tablespoons natural maple syrup / rice malt syrup
- 4 tablespoons water (will be less if using Medjool dates)
- 2 heaped tablespoons tahini paste
- 2 heaped tablespoons natural peanut butter
- 1/2 cup sesame seeds
Method
- Place the dates in a blender or food processor along with 2-3 tablespoons of water and blend/process until smooth.
- Pour the dates into a large mixing bowl and add the remaining ingredients, stirring well to combine. You may need to add a few more splashes of water if the mixture is too dry.
- Prepare a flat plate with the sesame seeds. With wet hands, take 1 heaped tablespoon of the mixture and shape into a round bliss ball. Next, roll the bliss ball into the sesame seeds and shake above the plate to remove excess seeds. Keep going until no more mixture is left; this should make around 16 bliss balls. Place in the fridge for one hour to set.
