Who knew guac and tofu were meant to be together? The combo of avocado + tofu toasted together seriously takes your sandwich to a whole new level. Soft buttery avocado, crispy edges, just downright AH-MAZING. Thanks to our amazing girl Lala for this epic recipe!
Serves 1 | Prep Time: 10 Minutes
Recipe notes: Add some tomato, kale, spinach or mushrooms to your toastie for some extra flavour!
INGREDIENTS:
• 1/2 medium avocado
• 60g natural firm tofu (non GMO)
• 1 tsp lime juice
• Pinch of garlic powder
• 1/4 tsp paprika
• 1/4 tsp cumin
• 1/4 tsp coriander seeds • sprinkle of salt and pepper
• 1 sprig fresh mint (finely chopped)
• 1 sprig fresh basil (finely chopped)
• 2 slices of your favourite bread
METHOD:
1. Preheat a non-stick fry pan or heat your toastie maker/sandwich press.
2. Add tofu and avocado to a medium bowl, and using a fork mash and mix together until no large lumps remain. Add lime juice, spices, herbs and salt & pepper and mix well.
3. Evenly spread all the avo tofu mash onto one bread slice and then place the other bread slice on top!
4. Place your sandwich into your frypan or sandwich press and grill until lightly golden. If using a fry pan - remember to flip your sandwich after 1-2 minutes, so that both sides are grilled. Transfer to your favourite plate & enjoy!!
