Mexican salad with creamy avocado dressing

This delicious, healthy, somewhat 'Mexican' salad recipe is adapted from a recipe on tasty.co. It's very easy to make and is filling, colourful and choc full of avocado; which are in season and amazing right now!

With isolation restrictions easing, I'm finding much less time to cook, therefore quick, nutritious recipes like these are perfect. I often add a serving of marinated tofu to this salad or a veggie burger. I know that the second half of the year is going to be full on for so many people and I say bring it on! We've all got this and can come together to rebuild as a community after COVID.

My personal rebuilding involves reopening my almost 8 year old Pilates studio in Brisbane! I feel that as we survived quarantine and the shutdown, we can survive anything that is thrown our way. So, why not throw a second studio into the mix? We are opening another location filled with affordable pilates classes, which we all desperately need post isolation! Find our Premium Pilates and Fitness classes at Camp Hill and Coorparoo, on Brisbane's southside. I can't think of a time when we needed community and health and fitness more than now.

Time to stop my rambling...here is the delicious salad:

Ingredients - Salad

  • 1 head of butter lettuce, roughly chopped
  • 1 medium red capsicum, deseeded & cut into small pieces
  • 1 large tomato, cut into small pieces
  • 1/4 cup of coriander, finely chopped or omit if you hate it!
  • 1 x 400g tin of black beans, washed & drained
  • 1 x 425g tin of corn, washed & drained
  • 2 spring onions, finely chopped
  • 1/2 red onion, finely chopped

Ingredients - Avocado dressing

  • 1 large ripe avocado, halved
  • 2 cloves garlic, roughly chopped
  • a generous pinch of sea salt & black pepper
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon finely chopped coriander or spring onions
  • the juice of 1 lime
  • water

Method

  1. Pour all the ingredients into a blender or nutrabullet and blend until smooth. You will need to add small splashes of water to make the dressing less runny than a paste. It will also be similar to a smoothie consistency.
  2. In a large serving bowl combine all the salad ingredients.
  3. Pour the dressing on top of the salad and toss well. Divide into 4 bowls. Add your protein and enjoy!
