Summer Soba Noodle Salad

You can cook the turkey or chicken on the bbq or grill instead of using the oven; at the moment we are having our stove replaced so I had to use whatever I could! A light but filling fresh salad.  

Ingredients

  • 1 tablespoons miso paste
  • 1 teaspoon sesame oil
  • 1 garlic clove, crushed or finely chopped
  • 400g turkey or chicken breasts, fat removed
  • 270g soba noodles
  • 60g mixed lettuce
  • 200g snowpeas, trimmed and thinly sliced
  • ½ a large green capsicum, deseed and thinly sliced
  • 200g cucumber, thinly sliced
  • 2 medium carrots, thinly sliced
  • 1 large celery stalk, thinly sliced
  • Optional:coriander and/spring onion, finely chopped, to serve

Dressing

  • 1tablespoon lime juice
  • 1teaspoon sesame oil
  • 1tablespoon reduced-salt soy sauce or tamari
  • ¼-1teaspoon chilli flakes

Cooking

1. Preheat an oven to 200 degrees Celsius. Have a baking tray or baking dish ready.  

2. Combine the miso paste, sesame oil and garlic in a small bowl and stir well. Brush the mixture onto the breasts thickly.

3. Place the meat in the baking tray/dish and bake for 20-25 minutes or until cooked through. Remove from the oven and slice into strips.

4. Whilst the meat is cooking, cook the noodles according to the package instructions. Make the dressing by combining the ingredients plus 4 tablespoons of water in a small bowl.

5. Prepare the salad by combining the cooked noodles, lettuce, snow peas, capsicum, cucumber, carrots, celery and coriander and/or spring onion, if using. Add the meat and drizzle the dressing over thetop. Toss well.
