Add the fresh lettuce and onion (and any other veg you’d like) with theParmesan and Caesar dressing, and you’ve got something filling, nutritionally balanced andabsolutely delicious!

Time:10 minutes
Ingredients:
100 g chicken mince
1 rasher bacon, finely diced
2 soft mini tortillas
1/2 cup shredded lettuce
1/4 red onion, thinly sliced
2 tbsp Caesar dressing
2 tbsp grated Parmesan
Extra virgin olive oil, for frying
Fresh salt and pepper, to taste
Method
1.In a small bowl, combine the chicken mince and diced bacon. Season lightly with saltand pepper.
2.Spread the mince mixture evenly over one side of each tortilla.
3.Heat a small pan over mediumheat with a drizzle of extra virgin olive oil.
4.Place the tortillas mince-side down in the pan and cook for about 3 minutes, or until themince is cooked through and nicely browned.
5.Flip the tortillas and cook for a further 30–60 seconds to lightly crisp the tortilla side.
6.Remove from heat and top with shredded lettuce, red onion, Parmesan, and Caesardressing.
7.Fold or roll up and serve immediately while hot and crispy.
