This quick high-protein bruschetta is a simple breakfast and perfect for summer mornings! The cottage cheese provides 12g of protein alone and serving on sourdough provides a good source of complex carbohydrates whilst also feeding your good gut bacteria. Paired with tomatoes and basil for micronutrients and antioxidants and some extra virgin olive oil for healthy fats, you have the perfect well-balanced breakfast to fuel your day!

Ingredients:

2 slices of sourdough bread

1/2 cup cherry tomatoes, chopped

2 tbsp fresh basil leaves, chopped

100g cottage cheese

1 tsp extra virgin olive oil

1 tsp balsamic vinegar

Pinch of salt

Instructions:

1.Toast the sourdough slices until golden and slightly crispy.

2.In a small bowl, combine the chopped cherry tomatoes and basil.

3.Add the olive oil, balsamic vinegar, and a pinch of salt to the tomato mixture and stirwell.

4.Spread the cottage cheese evenly over the toasted sourdough slices.

5.Top each slice with the tomato and basil mixture.6.Serve immediately and enjoy as a quick, protein-packed breakfast
