I often crave a big bowl of warm or fresh veggies at lunchtime, and this bowl has both! I know for lunch I always want something really quick, fuss-free and simple, so this nourish bowl is always a fab yummy go-to & packed with protein!! Recipe from our kitchen wizz Lala!
Ingredients:
- 2 slices (50g) smoked salmon
- 1/4 cup diced red capsicum
- 1 small can (100g) drained chickpeas
- 1 teaspoon smoked paprika
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/2 teaspoon mixed herbs
- 1 egg (poached or boiled)
- 1/4 cup cooked quinoa
- 1/4 cup cooked brown rice
- 1 cup rocket leaves
- 1/4 avocado
- 1 teaspoon black sesame seeds
- Fresh lemon or lime juice
- Salt and pepper to taste
Method:
1. Pan fry chickpeas in paprika, cumin, garlic powder & mixed herbs until almost browned.
2. Add in diced capsicum and sauté with chickpeas until crispy.
3. Add smoked salmon slices and break apart with spatula. Sauté until salmon turns golden brown.
4. Place rocket in your bowl & top with sliced avocado and poached egg.
5. Add cooked quinoa, brown rice and the chickpea salmon mix to your bowl. Top with a sprinkle of black sesame seeds, and a drizzle of lemon or lime juice.
